Homemade Veggie Burgers

Tonight we tried making our very own Homemade Veggie Burgers.  These *can* be organic but tonight we mainly went for cheap, opting for conventional cans of black beans and corn (though we did still splurge on organic tomatoes)…

You will need:

  • 1 (2-ounce) hamburger bun, torn into pieces
  • 3 tablespoons olive oil, divided
  • 2 teaspoons chopped garlic
  • 1 (15.25-ounce) can black beans, rinsed and drained
  • 1 teaspoon grated lime rind
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon chopped fresh oregano
  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
  • a splash of Worcestershire Sauce
  • chopped red onion
  • 3 Tablespoons of corn

Ground hamburger bun to breadcrumbs.  Set aside.  Mix garlic, black beans and onion in hand blender.  Add to breadcrumbs.  Add the rest of the ingredients.

 

 

Divide into four patties; cook on stovetop with a little bit of oil.

 

 

Garnish and eat as you would a hamburger.  (Also pictured: sweet potato waffle fries and “spicy ketchup”)
