Homemade Vegetable Hash
Never feel bad about adding fat to your veggies – good fat that is – as fat helps deliver the vitamins from your vegetables to the cells of your body that need them.
This vegetable hash was made from a combination of chopped:
Potatoes
Onions
Tomatoes
Broccoli
Zucchini
Squash
(amount of vegetables varies by taste)
Drizzle with Olive Oil and Garlic Powder
Top with Parmesan Cheese and/or Grated Cheese
Bake in oven til veggies are soft and cheese is browned.
