So I would like to state for the record that, while I respect vegetarians and consider myself “mostly” vegetarian, I’m not a vegetarian.
I have found that, with my active dance & circus lifestyle, I need meat; otherwise, I see my energy levels suffer, my hair and nail health suffer and I start to lose more weight than I can afford.
Now, when I say “I need meat,” I mean that I need meat once or twice every week or two. AND, I try very very hard to find meat from sources I can trust, sources that treat their animals well while they’re alive, sources that don’t sneak in nasty hormones and antibiotics to increase their bottom line.
That being said, I also try to vary my protein source – different animals provide different nutrients. Which is why I make the following recipe with lamb (I know, I know, they are adorable and peaceful animals) but you can substitute with chicken or beef.
GREEK GYROS
You will need:
Meat (we used boneless lamb)
Olive Oil
Greek Seasoning (we used the recipe below)
Onion (we typically use sweet vidalias)
Tomatoes
Cucumbers
Tzatziki Dressing (Greek cucumber yogurt)
Feta Cheese
Soft Pita or Naan

Saute meat, onion and greek seasoning to taste in olive oil.
Fill like greek tacos.

GREEK SEASONING
1 teaspoon salt
2 teaspoons dried oregano
1-1/2 teaspoons onion powder
1-1/2 teaspoons garlic powder
1 teaspoon cornstarch
1 teaaspoon freshly ground black pepper
1 teaspoon beef-flavored bouillon granules
1 teaspoon dried parsley flakes
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
